CHERRY BANA

The Algarve is a touristic spot , and there is a saying that goes something like ..... To be perfect all it needs is a cherry on top ....so i can say my motivation for this drink is the perfect setting with the perfect cocktail, but with a cherry on the bottom ;)

INGREDIENTS

4cl CRF 

4cl BOLS CHERRY BRANDY 

5 to 6 red cristalized cherries 

3cl fresh lemon juice 

FOR THE FOAM: 

5cl FINEST CALL BANANA 

1 BANANA 

4cl BOLS BANANA 

1- 2 BAR SPOONS OF SOY LECITINE 

FLAT WATER Q.B TO PRODUCE FOAM

GARNISH: Red Cristalized cherries, Banana peel.

METHOD

For the foam:

add the banana, the "finest call banana" and the "Bols Banana" into a blender and blend, after the ingredients will become a thick liquid and then add them into a boiling pan and some water so it become a little more liquid , add the soy lecticine and mix it with the same machine you use to make a normal soup until it creates a nice consistent foam.

foam is done ! let´s go for the cocktail :

For the cocktail:

muddle the cherries together with the CRF, BOLS CHERRY BRANDY and the fresh lemon juice, add ice , shake and double strain into a Martini Glass, after that, top up with the foam using a bar spoon and garnish with red cristalized cherries and banana peel.... ENJOY!!!
