A Bellini is an internationally well-known long drink cocktail that originated in Italy. It is a mixture of sparkling wine and peach purée often served at celebrations. It is one of Italy's most popular cocktails.
10.0 cl (2 parts) dry sparkling wine (or champagne).
5.0 cl (1 part) fresh peach purée.
Take your peaches. Remove the stones, cut the flesh into small pieces, and blend at high speed until puréed.
Preparation: Pour peach puree into chilled flute, add gently sparkling wine. Stir gently.
Serving glass: Tall champagne flutes, straight up"; without ice.
